I think I've come across one of my new favorite pasta salad recipes, y'all. If you like Mexican Street Corn (which I most definitely do!), then you're going to like this pasta salad.
I made this to take to a family cookout last weekend, and it had everyone asking about the flavors and how I made it. It's a unique pasta salad that most don't expect, which is one of the reasons why I think it is so good.
I started by using a new pasta that many don't use often. The ditalini pasta is just the perfect size and shape for this dish, reminding me of little corn kernels. It is also fun to eat!
I'm a big fan of flavor, and this pasta salad gets its bold flavor from the Duke's mayo, Tajin seasoning, and the crumbled feta, which gives it a smooth, salty vibe, with a little tangy kick.
If you're planning a weeknight taco meal or even a summertime cookout, you're going to want to add this pasta salad to the lineup.
If you try it, let me know what you think. It's definitely a keeper, in my book!
