Easy Bacon & Veggie Quiche with a Creamy Twist

I actually first had this quiche at my aunt’s house one morning years ago, right before a full day of yard sale shopping in Georgia. I wasn’t really a quiche girl back then (because I didn’t think it was my thing). But after trying hers, I completely fell in love.


There was something about the creamy filling, the crispy bacon, and those sautéed veggies that just felt so comforting and delicious. And watching it all come together so quickly sold me. I came home, hunted down the recipe, and made it not long after. And honestly? I’ve been making it ever since.


This bacon and veggie quiche quickly became a favorite in my house because it’s just so easy to throw together. Sometimes I'll make it on a slow Saturday morning and enjoy it with a cup of coffee. A simple store-bought pie crust, some eggs, sour cream for creaminess, bacon for a bit of salty crunch, and whatever veggies you like- really, the possibilities are endless here. I usually sauté onions, bell peppers, and sometimes I'll add mushrooms if I have them on hand to give it that extra flavor punch. I always top it off with a dollop of sour cream (ahem, Daisy Sour Cream, that is!)


I love that it’s perfect for breakfast, brunch, or even a quick dinner. It makes a nice-sized pie that feeds a crowd, which is great when family or friends come over, or if you want leftovers for the next day. It reheats wonderfully, too!
