"Delicious and Easy Sweet Chili Pork Taco Recipe for Your Next Taco Night!"

I love this twist on a taco, y'all! I don't know if it's the sweet pork, the tangy slaw, or the peanuts on top, but this flavor combination is a winner! I love to make these tacos when I'm in the mood for something delicious that tastes gourmet but is simple to make. This recipe is different from what I'm used to in a taco, which is why I think I love it so much! Go ahead and add these sweet chili pork tacos to your meal rotation and let me know what you think!

What You'll Need:

(Yield: 8 Tacos)

1 lb. of ground pork

Flour Tortillas (fajita size)

2 cups of red cabbage, shredded

Sweet Chili Sauce

Ponzu Sauce (If you can't find this, use soy sauce and lime juice)

1 Lime (or lime juice)

Peanuts, enough for a garnish

1/2 cup of sour cream

Cornstarch

Sugar

Garlic, minced

What You'll Do:

Zest and quarter the lime if you're using fresh lime, shred the cabbage, and chop the peanuts.

In a small bowl, stir together about 3 Tbsp. of lime juice (or the juice from 1/2 the lime), 1/2 tsp. of sugar, and a pinch of salt and pepper. Add 1/2 cup of cabbage and toss to coat. Set it aside.

In another small bowl, combine the sour cream, a pinch of garlic, lime zest (if using fresh lime), or 1 tsp of lime juice, and add some water 1 tsp at a time until it reaches a drizzling consistency. Set it aside.

Heat a drizzle of oil in a pan on medium-high heat. Add the pork and salt and pepper and break it apart to cook. Cook for about 4-5 minutes or until it is browned, but not completely cooked through. Add in the remaining cabbage and some minced garlic. Cook until the cabbage is wilted and the pork is cooked through.

Add 2 tsp. of cornstarch, 1/3 cup of water, sweet chili sauce, and ponzu sauce (or soy sauce and lime juice). I added enough to coat the pork, but just measure with your heart. Cook, stirring, until the sauce has thickened, about 2-3 minutes. Turn off the heat.

Wrap the tortillas in a damp paper towel and microwave until soft and warm, about 10 seconds. Fill tortillas with the pork mixture and then top them with the cabbage slaw, a drizzle of sour cream, and sprinkle them with peanuts. Enjoy!
