Creamy Tortellini and Sausage Soup

What You'll Need:
1 lb. mild Italian sausage
1 medium onion
1 Tbsp. of minced garlic
2 Tbsp. of all-purpose flour
3 Tbsp. of vegetable oil
1 (28oz) can of crushed tomatoes
5 cups of chicken broth
2 cups of spinach, chopped
15 oz of refrigerated tortellini pasta
1 cup of heavy whipping cream
1/2 cup of parmesan cheese, shredded
salt and pepper to taste
Everglades seasoning to taste
What You'll Do:
In a large pot, cook the sausage in 2 Tbsp. of oil over medium heat until it is no longer pink in the middle, breaking it down into smaller pieces. I like to call this "scrambling" the sausage. While the sausage cooks, chop the onion into small pieces. Once the sausage is cooked, use a slotted spoon to remove it from the pot, but leave the grease behind because that's what you're going to cook your onion in. We're going to maximize the flavor here, y'all.
Add to the sausage grease 1- 2 Tbsp. of oil so you have about 3 Tbsp. altogether and then toss in your onion and cook it for about 7-10 minutes or until it becomes translucent. Stir it occasionally to be sure it doesn't burn. Adjust the heat as necessary. Add in the minced garlic and cook for 1-2 minutes, stirring frequently. Stir in the flour and cook for another 2-3 minutes, stirring frequently until all of the grease is absorbed.
Now add the crushed tomatoes and the chicken broth and bring everything to a boil. Once it's boiling, add in the tortellini noodles and allow them to cook according to the package directions—usually about 3-5 minutes.
Add in the sausage and spinach. Then stir in the cream and parmesan cheese. I like to add in a little Everglades seasoning and salt and pepper to taste.
Serve the soup hot and enjoy!

I made this last night and it’s a WIN! Even the two year old loves it! Maybe I’m slow while cooking; it took me a little longer than 30 minutes, but it was worth it! It’s hearty and definitely a comfort soup! Highly recommend! This made plenty for 3-4 of us and we had a whole bowl of leftovers!
