Whip Up This Simple Noodle Bake for a Stress-Free Weeknight Dinner

I'm always looking for easy-peasy weeknight dinners that are fuss-free and delicious. I've found a good one, y'all! This recipe was inspired by the Pioneer Woman and was a family favorite at my house for sure! After I made this, I took some over to my Mom and Dad and they both gave it rave reviews. It pairs well with garlic bread and salad for a quick and simple Italian night at home. I've written the recipe I used below. If you try this one, comment below and let me know what you think!

Kindall's Noodle Bake

Prep Time: 15 Minutes
Cook Time: 20 Minutes
Yield: 8 Servings

What You'll Need:

  • 1 1/4 lb. ground beef

  • 1 15-oz. can of tomato sauce

  • Garlic salt

  • Pepper

  • Italian seasoning

  • 8 oz. egg noodles

  • 1/2 cup sour cream

  • 1 1/4 cups of small curd cottage cheese

  • 1/4 cup sliced green onions (more to taste)

  • 1 cup freshly grated Colby Jack cheese

  • 1/4 cup butter

What to do:

Preheat your oven to 350 degrees.

Brown the ground beef in a large skillet. Season it with garlic salt and pepper. Drain the fat and then add in the tomato sauce. Add plenty of Italian seasoning, stir, and simmer while you prepare the other ingredients.

Cook the egg noodles until tender. Don't forget to salt the water! Drain and set aside.

In a medium bowl, combine the sour cream and cottage cheese. Add plenty of black pepper and stir. Add in the chopped green onions and stir.

To assemble, add the butter to the bottom of a baking dish and layer in the noodles, sour cream mixture, and red sauce. Repeat the layering until all ingredients have been added, ending with the red sauce. To the top of the dish, sprinkle the freshly grated cheese. *I love this cheese grater if you can't tell!

Bake for 20 minutes or until all the cheese is melted.

Serve with your choice of bread and enjoy!
