Craving a comforting, home-cooked meal but short on time? This easy one-pot chicken and dumplings recipe is just what you need! Using biscuits for dumplings, you’ll get that same deliciously tender, home-cooked feel—without all the extra effort. Grab a spoon and dig into this soul-warming dish in no time! Let me show you how to make it!
What You'll Need:
1 rotisserie chicken, de-boned
1/2 stick butter, salted
2 cans cream of chicken soup
2 cups of chicken broth
1 cup of milk
1 can of buttermilk biscuits
How to Make the Chicken and Dumplings:
Start by de-boning your rotisserie chicken. I usually do this the night before, so the prep is super simple. Tip: de-bone the chicken while it is still warm. It's so much easier!
Add the butter, cream of chicken soup, chicken broth, and milk in a large pot and stir well over medium-high heat until it comes to a rolling boil.

Once the broth is combined and boiling, add in your rotisserie chicken. As this cooks, the chicken will continue to break down so you can use larger or smaller chunks. Just do what you like!

Once your chicken has been added, I usually let it simmer on a low boil for a little while to give that chicken a little time to break down.
When you're ready, be sure the broth is boiling, and add 1 can of biscuits. I cut each biscuit into bite-size pieces (6 per biscuit) and add all of the pieces to the boiling broth.

Allow the biscuits to cook thoroughly for 10 minutes or so, stirring frequently.
Add salt and pepper to taste. Always taste this before adding salt. The chicken broth usually adds enough salt and I only have to add pepper.
Serve warm and enjoy!

Some tips...
If you like thinner dumplings, roll out the biscuits before cutting them. If you don't roll them out, you'll have thicker dumplings as they tend to "puff up" when they're cooked.
You may have to adjust your liquid once you add the chicken and biscuits. If I have to adjust, I add 1 cup of water at a time until it reaches the desired consistency.
To store, keep in an airtight container for 3-4 days. Reheat in the microwave or on the stove.
