This is a classic recipe for soft, chewy scotcheroos. Not sure what a scotcheroo is? Think peanut butter and butterscotch combined for a sweet and chewy treat. And what's even better? There's no baking involved! These are perfect for parties and potlucks or to enjoy anytime!
Prep time: 20 minutes
Total Time: 20 Minutes
Ingredients:
- 1 cup granulated sugar
- 1 1/3 cup light corn syrup
- 1 1/3 cup peanut butter, creamy
- 1 tsp. vanilla
- 6 cups Rice Krispies cereal
- 1 1/2 cups milk chocolate chips
- 1/2 cup butterscotch chips
How to Make:
1.Spray a 9x13 baking dish with non-stick spray and set it aside.
2. Pour your cereal into a large bowl and set it aside.
3. Mix sugar and corn syrup in a medium saucepan and stir well until combined.
4. Place your saucepan on the stovetop over low heat and stir until warm, you don't want it boiling.
5. Remove from the heat and stir in the peanut butter and vanilla.
6. Pour the mixture over the Rice Krispies and stir well to combine.
7. Pour into the prepared baking dish, distribute evenly, and press down firmly.
8. Combine the butterscotch and chocolate chips in a microwave-safe bowl and microwave at 30-second intervals until smooth and melted.
9. Pour over the Rice Krispies and spread evenly until covered.
10. Let the chocolate harden before cutting.
And now you can enjoy these yummy treats! If you don't love butterscotch, just omit the butterscotch chips and replace them with chocolate chips. I used milk chocolate, but you could use any variety you like!
All of the ingredients for this recipe were found at Walmart! The polkadot casserole dish is in my Walmart storefront. I love it so much! I'll link it here for you!
