Irresistible Pumpkin Bread

What You'll Need

  • 1 3/4 cup all-purpose flour

  • 1 Tbsp. cinnamon (you can substitute pumpkin pie spice if you have it)

  • 1 tsp. nutmeg (omit this if you use the pumpkin pie spice.)

  • 1 tsp. baking soda

  • 1/2 tsp. salt

  • 1 (15oz) can of pumpkin puree (not pumpkin pie filling!)

  • 1 cup granulated sugar

  • 1/2 cup packed brown sugar

  • 2 large eggs

  • 1/2 cup vegetable oil

  • 1 Tbsp. vanilla extract


What You'll Do

Preheat your oven to 375 degrees. Spray a loaf pan with nonstick spray and line it with a sheet of parchment paper. Set it aside.


In a small bowl, combine the flour, baking soda, cinnamon, nutmeg, and salt. Whisk to combine and set it aside.

In a large bowl, add the pumpkin puree, granulated sugar, brown sugar, eggs, and oil. Whisk to combine.

Add the dry ingredients to the wet ingredients and stir well. The batter should be thick with a few lumps. Just be sure the flour is incorporated.

Pour the batter into the loaf pan and bake for 50-55 minutes until the center is set. If you notice the top browning too quickly, lightly cover the loaf with aluminum foil to prevent burning.

Remove the bread from the oven and serve warm. Enjoy!
