Old-Fashioned Pimento Cheese

Warmer weather is here, so I've been reading about different types of dips and spreads that would be perfect for backyard gatherings or simple anytime snacks. Pimento cheese is one of those dips that take me back to my childhood and once I realized how easy it was to make, I knew I had to give it a try. I grew up on pimento cheese sandwiches! There's just something about the cheesy, zesty goodness of pimento cheese and it's even better when it is homemade. Surprisingly, pimento cheese is super quick and easy to make with few ingredients and very low prep.


It's delicious with crackers (Ritz crackers are my fave!), on burgers, in grits, or on a sandwich. There are so many ways to enjoy pimento cheese. Of course, no matter how you choose to eat it, it's easiest to spread at room temperature, which makes it great for spring and summer gatherings.


All you need to make your own homemade pimento cheese is some sharp cheddar, mayonnaise, cream cheese, pimentos, and a few spices. Be sure to shred your own cheese, though, because pre-packaged shredded cheese is coated with an anti-caking agent that will prevent your spread from coming together smoothly. I used one 8oz block of sharp cheddar, but you could also use other kinds of freshly shredded cheese. I think smoked gouda or pepper jack (if you like a little more of a kick) would also be so good.



Once you have your cheese shredded, add 4oz of softened cream cheese, 1/2 cup of mayonnaise, and your finely chopped pimentos to your mixing bowl. Then, simply add in your spices, stir well, and voila! Your pimento cheese is ready to be devoured!


If you're really feeling adventurous, I think this dip would also be so delicious if served alongside jelly or jam for a little sidekick of sweetness.
