What You'll Need to Make Hot Cocoa Cookies:
1 1/4 cup butter
1 cup sugar
2/3 cup of brown sugar
2 eggs
1 tsp vanilla
3 1/4 cups all-purpose flour
4 packets of instant hot cocoa mix
1 1/4 tsp. baking soda
1 tsp. baking powder
1 cup of chocolate chips (I used 1/2 cup of semi-sweet and 1/2 cup milk chocolate)
1 cup jet-puffed mini marshmallow bits
What You'll Do:
Preheat your oven to 350 degrees. Line a baking sheet with parchment paper and set it aside.
Cream the butter, sugar, and brown sugar in a large bowl or stand mixer until light and fluffy. Add in the eggs and vanilla and mix well.
In a medium bowl, whisk together the flour, instant hot cocoa mix, baking soda, and baking powder.
Slowly add the dry ingredients to the wet ingredients and mix until well combined.
Stir in the chocolate chips and mini marshmallow bits.
Scoop the cookie dough into balls onto the prepared baking sheet.
Bake for about 9 minutes or until cookies are firm around the edges. Cooking time will vary based on your oven and location. Begin watching them at about 9 minutes, but they may need up to 15. Just be careful not to overbake them.
For some added pizzazz, press a few additional chocolate chips and mini marshmallow bits into the top of the warm cookies.
