Step into the comforting embrace of a steaming bowl of goodness with this latest recipe – Kindall's Hearty Vegetable Beef Soup. As the weather cools and cravings for warmth set in, this recipe is a nourishing soup for the soul. Picture tender chunks of beef mingling with vibrant, nutrient-packed vegetables, creating a symphony of flavors in every spoonful. Whether you're seeking a wholesome family dinner or a satisfying meal to ward off the winter chill, this soup is your ticket to a hearty, nutritious delight.

Prep Time: 5 Minutes

Cook Time: 1 Hour 25 Minutes

  • 1 lb. of ground beef (I use 1.5-2 lbs. because I like mine a little heartier)

  • 1 packet of onion soup mix

  • 1 3/4 cup of mixed frozen vegetables

  • 6 cups of chicken broth

  • 1 can of diced tomatoes, 28 oz. can

  • 1 1/2 cup of elbow macaroni noodles, uncooked

  • Garlic salt and pepper to taste

How to Make It:

Season and brown the ground beef in a large pot and drain the fat off.

Add the chicken broth, soup mix packet, ground beef, and can of diced tomatoes with juice to the pot. Simmer for 1 hour, stirring occasionally.

Add in the vegetables and the macaroni. Cook on medium heat for about 15 minutes or until the noodles are tender. Serve hot.

I like to top mine with shredded cheese and sour cream. The possibilities are endless. Enjoy!
