Comfort Food Classic: Creamy Chicken and Rice Casserole Recipe

This recipe has been a favorite of mine for many years. I remember when I first moved out on my own and I couldn't wait to start making homemade meals in my own kitchen. This is one of those go-to recipes that has withstood the test of time, in my home at least. This is a true southern comfort classic and it is a delightfully simple dish that everyone in the family will love. I'm so excited to share this dish with you in hopes that it will be a favorite in your home for years to come.





Creamy Chicken and Rice Casserole


Prep Time: 15 Minutes
Cook Time: 20 Minutes
Yield: 8 Servings

What You'll Need:

  • 1 Rotisserie chicken, shredded (I use about half the chicken from 1 whole rotisserie.)

  • 1 box of Rice-A-Roni, chicken flavored (6 oz.)

  • 1 can of cream of mushroom soup (10 0z.)

  • 1 cup of sour cream

  • French fried onions (I LOVE the garlic pepper onions in the salad section at Walmart!)

  • Cheese, shredded- optional


What to do:

Preheat your oven to 350 degrees.


Cook the Rice-A-Roni according to the directions on the box.




While the rice cooks, de-bone and shred the rotisserie chicken. It is easiest to do this while it is warm if you can.


Once the rice is cooked, add in the sour cream and cream of mushroom soup and mix well. Then, add in the chicken.




Stir everything well until it is combined and add the mixture to a greased 9x13 baking dish.


Top with the cheese (optional) and crispy onions and bake at 350 degrees for about 20 minutes or until the cheese is melted and the sides are bubbly.

Notes and Tips:
  • If you don't like or have cream of mushroom soup, you can substitute cream of chicken soup instead.

  • Add more or less chicken to your liking. I like to shred my chicken into very small pieces. I use about half of a rotisserie in this recipe.

  • I don't add any additional salt or pepper to this dish. The rice seasoning and the onions on top give it lots of flavor.

  • I love cheese so I always opt to add shredded cheese to the top before I sprinkle on the crispy onions. It's totally up to you! Of course, freshly shredded cheese is always best, but just use what you have!

  • If you have a local Walmart, check the salad toppings aisle to see if they carry the garlic pepper french fried onions. I'm telling y'all....these make the BEST topping! If you can't find them, regular French fried onions will do just fine.
